Ok everyone out there... I am craving to make some new fall recipes. Does anyone want to share? If you have a good fall recipe (apple crisp, pies, soups, etc.) Please post it as a comment here! Love y'all :D
2 tbsp butter 1 onion, chopped 6-7 cups of cubed squash/pumpkin/zucchini/you get the idea (keep the skin, just make sure you clean it real well--you can mix them all for more fun!) 7-8 cups of chicken broth 1/2 tsp ground cumin (feel free to add more to taste) pinch of ground nutmeg (same here, but don't put too much of this) salt (sea salt is the best!) and freshly ground black pepper (celery powder is good with this too) fresh chives to garnish
1) melt the butter in a large saucepan and saute the onions 5 minutes until softened 2) add the squash, broth and spices, and season w/ some salt and pepper to start off. Reduce heat to medium low and let simmer for about an hour (you want the squash to get really soft--it's best if it starts peeling off the rind) 3) blend until smooth (if you have a soup blender do it directly in the pot, if not transfer into a blender--don't let it splatter you WILL die of first-degree burns! let's just say it may have happened to me once...) At this point add more spices, seasoning to taste 4) serve with a good spoonful of sour cream/plain yoghurt and some chopped fresh chives sprinkled on top 5) voila! you can also freeze lots and reserve later.
Hi i dont have a lot of time right now so i am not going to write it all out. But you have to make this chili. Go to all recipies.com and search for flatlander chili. It so so good. I make it with homemade sweet corn bread.

ReplyDeletePumpkin Pie Dessert
Step 1:
1 pkg white cake mix(set aside 1 cup)
Take remaining and add 2 tbl flour, ½ cup melted butter and 1 egg. Mix well and press into 9x13 pan, do not bake.
Step 2:
Mix large can pumpkin, 2 beaten eggs, 1/3 cup brown sugar, 2/3 cup milk, 1 cup white sugar, and 2 tsp pumpkin pie spice. Pour over cake batter.
Step 3:
Take remaining cup of dry cake mix and mix in ¼ cup sugar, 1 tsp cinnamon, ¼ cup butter. Cut into crumb mixture and sprinkle over pie filling.
Bake at 325 or 350 for 45minutes.
Cool.
Topping
2 cups whipping cream
1 small pkg instant vanilla pudding
Whip together.
